How Gaya Mexican Vanilla is Made
The great idea sparked in Veracruz, where Meixcan Vanilla was born. The Gaya Mexican family has been producing this extract since 1877, making their mark in history as this delicacy became more known. The process begins with a vanilla orchid grown in the shade of either chocolate or citrus trees. After some growth, the beans are then harvested by hand and kiln cured. Sounds pretty simple right? As easy as it sounds, it was a tedious process, but eventually resulted in a rich, floral fragility that is quite commonly used today.
