Pollo en Achiote
(Chicken in Achiote Marinade)
• 4 chicken breasts, with ribs, skin removed
• 1 oz condiment de achite
• 1 tsp. dried oregano
• salt and pepper
• ½ cup vinegar or sour orange juice (not sweet)
Place chicken in shallow glass dish. Combine achiote, spices, and vinegar in separate bowl. Pour over chicken and let marinate for 30 minutes in the refrigerator. Grill chicken over hot coals or gas grill until well cooked, about 30 minutes.
