How to Make the Perfect Homemade Pie Crust

Perfect Homemade Pie Crust Recipe

 

Single 9" Pie Crust:

 

  • 1 1/3 cups all purpose flour
  • 1/3 cup shortening
  • pinch salt
  • 3 - 4 tbsp. ice water

 

Double 9" Pie Crust:

 

  • 2 cups all purpose flour
  • 2/3 cup shortening
  • pinch salt
  • 6 - 7 tbsp. ice water

 

In a large bowl, add in flour, shortening and salt. Knead with your hand until the mixture resembles a course meal. Add in the water one tablespoon at a time, until the dough can form a ball. Chill for one hour before rolling out.

In you need a baked pie shell, here is a trick to keep the crust from shrinking up when you bake it. Roll out the dough, line the pie plate and flute the edges. Prick holes in the pastry with a fork. Then place a sheet of aluminum foil over the pie crust. Press down to fit over crust, being careful of the fluted edges. Pour in either dried beans, or pie weights. Bake the pie crust for 10 minutes at 375 degrees. Remove crust from oven, remove foil with uncooked beans or pie weights, then bake pie crust for another 5-10 minutes. (Beans can still be cooked and eaten as usual.)
