How to Make Horchata

Horchata Recipe
(Rice Refreshment)

 

Horchata is a drink made from boiled rice. It is a wonderful drink to give to babies, especially those who may have an upset tummy. For grown-ups, it is a nice change from soda, and remarkably refreshing.

 

The Ingredients

 

  • 8 cups water
  • 1 cup rice
  • 2 cinnamon sticks
  • 1 cup sugar (or to taste)
  • 1 tbsp. ground cinnamon
  • water

 

Authentic Mexican Horchata

 

In a saucepan, bring water, rice, and cinnamon sticks to a boil. Cook for 30 minutes, until rice is tender. Cool.

Remove cinnamon sticks. Place rice and liquid in the container of a blender (you may have to do a couple of batches). Puree well. Pour puree into a pitcher. Stir in sugar, ground cinnamon, and enough water to make 3 quarts of horchata. Chill well, and serve over ice.
