Atole de Fresa

Atole is a traditional beverage in Mexico. It is a cross between hot chocolate and pudding. You can make atole from the ground corn flour used to make corn tortillas, or from milk mixed with cornstarch.


How to Make Atole


Try banana, pineapple, or mango atole, using the same proportions of fruit to milk as listed below.


  • 1/2 cup fresh strawberries
  • 2 cups milk
  • 1/3 cup sugar
  • 2 tbsp. cornstarch


Combine milk and strawberries in a blender. Puree well. Add sugar. Set aside 1/2 cup of milk mixture.

Pour strawberry milk mixture into a saucepan. Combine cornstarch with remaining 1/2 cup of milk mixture. When cornstarch is completely dissolved, add into saucepan. Heat and bring milk to simmering point, stirring constantly. Atole is ready to serve when hot and thickened. Sprinkle with ground nutmeg and cinnamon.
