Our comal is the best tortilla griddle found anywhere, including those made south of the border. The low edge makes it easier to grab off hot tortillas.
The Lodge Company of Tennesee manufactures our tortilla griddle, and they include detailed curing instructions with each of their products.
Regarding rust on cast iron: In storage, cast iron has a tendency to "sweat," releasing microscopic particles of humidity. Because of this, occasionally cast iron merchandise
develops small spots of rust. We have checked with the manufacturer, and
they have assured us this is normal. When you start the curing process, your cast iron piece be sealed by the oil you apply, preventing further "sweating." Your cast iron piece has been checked for rust, and may have been coated with a food grade vegetable oil to
prevent further rust. This does not at all affect the quality of the item. If you ever see rust on your cast iron equipment, simply wipe the rusty area with a paper towel dipped in vegetable oil, and remove the rust stain.
A well cured cast iron skillet or comal will be a joy in your kitchen, and a treasure for future generations.
